It has been awhile since I shared a recipe with you. Considering we are expecting our (hopefully last) snow storm here in Colorado I decided to honor the moisture with a new soup creation in the kitchen. I used only things I had on hand and the result is off the hook. I'm going to call this one "Chicky Beef Chorizo Yumminess In A Bowl"!
Here is your ingredient list:
- 3/4 cup of cooked chorizo (or any sausage you like or have leftover from breakfast)
- 16 oz of ground beef (one package)
- 1 yellow onion (chopped and diced)
- 4 celery stalks (chopped and diced)
- 2 broccoli stalks (not the heads) (chopped and diced)
- 2-3 shredded carrots
- 1 serrano pepper
- 1 large tomato (chopped diced)
- 32 oz chicken broth
- 1 can of French style green beans
- one head of chopped garlic (no vampires or COVID at this household!)
Spices: - Chef's Shake (or your favorite blend of italian seasonings)
- Pepper
- Red Pepper flakes
- Salt
- Garlic powder
- Olive Oil
In a large soup pot turn the temperature to high. Add enough olive oil to coat the bottom of the pan, add large pinch of salt, and a pinch of red pepper (I like a good portion of red pepper but adjust it to your heat preference). Once the red pepper starts to sizzle add the onion, broccoli stalk, and celery. Add a generous portion of Chef's Shake, garlic powder, and salt to the sauteing veggies. In a separate pan (preferably cast iron) turn the pan on high heat. Add the ground beef, salt, pepper and chef's shake. Brown the beef. In the veggie pan add the shredded carrots, whole serrano, and green beans. Stir. Let Saute. Add chorizo (or left over breakfast meat) to the veggies. As the veggies begin to brown the bottom of the pan add in half of the chicken broth. Bring to a boil. Add the browned hamburger to the veggies. Deglaze the bottom of the beef pan by pouring water into the pan and scraping up any of the leftovers. Add the deglaze to the veggie pan which I will now refer to as the soup. Add the chopped garlic to the soup. Stir. Add the rest of the chicken broth. Bring to a boil. Add water (enough water to fill the soup pan or bring the soup to the soupiness of your liking). Bring to boil. Add a little more Chef's Shake and salt. Once it is boiling reduce to a simmer. Let simmer for 60-90 minutes. Enjoy!
